There are a great number of steps in the making of oolongs, more than any other tea. This makes oolongs one of the most complex teas to create. Their flavor ranges from mild and floral to strong and toasty, depending on the special techniques used to create each tea. Oolong tea has been found to increase metabolism, reduce high blood pressure, boost the immune system, and support dental health.
LP has chosen one of our favorite oolongs for this week’s tea pick: Frozen Summit. This is a roasted, hand-rolled tea from Taiwan, with clear, crisp, floral notes. This tea can be infused many times and as the tea steeps, the tightly rolled leaves unfurl to show whole leaf tips and buds.
Only the newly-sprouted leaf tips are plucked to make Frozen Summit. They are allowed to wither, and then are roasted and rolled up tight.

Pitta is an Ayurvedic herbal tea, made with rose petals, hibiscus, chamomile, and peppermint. It is a soothing, calming tea and has a sweet, floral flavor. These two teas blended together have a wonderfully fragrant aroma and a delicious flavor with a variety of floral notes.
